Aspen’s hottest new restaurants — in Snowmass? Really? Believe It!
 Eight K and Nest bring a cool new vibe to the mountainside

Finally, Snowmass Village, Colorado, has an eco-friendly luxury hotel with personality. Lots of talented people had a hand in the Viceroy Snowmass, but a large measure of its success goes to GM Jeff David. The affable veteran of Viceroy Anguilla opened the hotel at the start of this past ski season. What’s more, he did it on time and on budget: pretty impressive, especially in a recession. David is one of a new breed of hoteliers transforming hospitality. Not satisfied with just making sure beds are turned down and light fixtures work, he’s out to create happiness, both for his hotel guests (families, millennials, single boomers) and members of the community (with much-buzzed-about benefit parties for arts organizations and schools). Key to the happiness quotient at the Viceroy are its restaurants, Eight K and Nest. Aspenites may not be used to driving to Snowmass for dinner, but the Viceroy’s eateries offer plenty
of motivation, no matter your zip code.
